Une restitution des observations des \u00e9tudiants sur cette viande <\/strong><\/em><\/strong><strong><em><strong>est <\/strong><\/em><\/strong><strong><em><strong>organis\u00e9e <\/strong><\/em><\/strong><strong><em><strong>afin <\/strong><\/em><\/strong><strong><em><strong>de <\/strong><\/em><\/strong><strong><em><strong>confronter les regards d<\/strong><\/em><\/strong><strong><em><strong>es \u00e9<\/strong><\/em><\/strong><strong><em><strong>leveurs et d<\/strong><\/em><\/strong><strong><em><strong>es <\/strong><\/em><\/strong><strong><em><strong>apprentis<\/strong><\/em><\/strong><strong><\/strong><strong><em><strong>bouchers<\/strong><\/em><\/strong><strong><em><strong>. Venez nombreux pour enrichir les \u00e9changes et renforcer la compr\u00e9hension r\u00e9ciproque <\/strong><\/em><\/strong><strong><em><strong>entre les<\/strong><\/em><\/strong><strong><em><strong> professions bouch\u00e8re et d\u2019\u00e9levage. <\/strong><\/em><\/strong><strong><\/strong><\/p>\n\n\n\n<p>Cette vache de 7ans et 3mois a \u00e9t\u00e9 \u00e9lev\u00e9e par Herv\u00e9 Maz\u00e9 et Nathalie Jeandillou a Bujaleuf (87). Eleveurs d\u2019une soixantaine de brebis allaitantes et de 25 vaches m\u00e8res limousines, ils m\u00e8nent les 2 troupeaux presque exclusivement \u00e0 l\u2019herbe.<\/p>\n\n\n\n<p>Au cours de sa p\u00e9riode d\u2019engraissement la vache de r\u00e9forme n\u2019a jamais re\u00e7ue ni ensilage ni enrubannage. Elle a \u00e9t\u00e9 engraiss\u00e9e 100\u00a0% \u00e0 l\u2019herbe p\u00e2tur\u00e9e, au foin (et aux ch\u00e2taignes !). Elle a donn\u00e9 une carcasse de 336 kg, class\u00e9e R-3, matur\u00e9e pendant 12 jours.<\/p>\n\n\n\n<p><strong>LE MATIN<\/strong><\/p>\n\n\n\n<p><strong>De <\/strong><strong>8<\/strong><strong>h<\/strong><strong>30<\/strong><strong> \u00e0 10h<\/strong><strong>,<\/strong> les apprentis bouchers discuterons avec les \u00e9leveurs des modalit\u00e9s d\u2019\u00e9levage et d\u2019engraissement de l\u2019animal. Ce sera l\u2019occasion de questionner \u00e9leveurs et bouchers sur leurs approches et leurs attentes vis \u00e0 vis de l\u2019engraissement et de la valorisation d\u2019une b\u00eate. Herv\u00e9, avec l\u2019ADAPA, expliquera comment il organise son p\u00e2turage et ses rotations pour engraisser des animaux 100\u00a0% \u00e0 l\u2019herbe.<\/p>\n\n\n\n<p><strong>De 10h \u00e0 12h,<\/strong> les \u00e9l\u00e8ves feront leurs retours sur la d\u00e9coupe effectu\u00e9e. Les \u00e9changes seront suivis d\u2019<strong>une d\u00e9gustation<\/strong> de certains morceaux de la vache d\u00e9coup\u00e9e, accompagn\u00e9e d\u2019une grille d\u2019analyse afin de se questionner sur les crit\u00e8res de qualit\u00e9 d\u2019une viande engraiss\u00e9e \u00e0 l\u2019herbe (le go\u00fbt, la tendret\u00e9, le persill\u00e9 de l\u2019animal, etc.)<\/p>\n\n\n\n<p><strong><em><strong>Ce<\/strong><\/em><\/strong><strong><em><strong>t \u00e9v\u00e9nement est ouvert \u00e0 tous, entr\u00e9e gratuite.<\/strong><\/em><\/strong><\/p>\n\n\n\n<p><strong>Le matin <\/strong><strong>RD<\/strong><strong>V dans une <\/strong><strong>salle du CFA partie enseignement th\u00e9orique. <\/strong><strong>Le num\u00e9ro de la salle sera communiqu\u00e9 ult\u00e9rieurement.
