Une restitution des observations des \u00e9tudiants sur cette viande <\/strong><\/em><\/strong><strong><em><strong>est <\/strong><\/em><\/strong><strong><em><strong>organis\u00e9e <\/strong><\/em><\/strong><strong><em><strong>afin <\/strong><\/em><\/strong><strong><em><strong>de <\/strong><\/em><\/strong><strong><em><strong>confronter les regards d<\/strong><\/em><\/strong><strong><em><strong>es \u00e9<\/strong><\/em><\/strong><strong><em><strong>leveurs et d<\/strong><\/em><\/strong><strong><em><strong>es <\/strong><\/em><\/strong><strong><em><strong>apprentis<\/strong><\/em><\/strong><strong><\/strong><strong><em><strong>bouchers<\/strong><\/em><\/strong><strong><em><strong>. Venez nombreux pour enrichir les \u00e9changes et renforcer la compr\u00e9hension r\u00e9ciproque <\/strong><\/em><\/strong><strong><em><strong>entre les<\/strong><\/em><\/strong><strong><em><strong> professions bouch\u00e8re et d&rsquo;\u00e9levage. <\/strong><\/em><\/strong><strong><\/strong><\/p>\n\n\n\n<p>Ce veau ros\u00e9 de tout juste 9 mois (donc en th\u00e9orie un \u00ab\u00a0jeune bovin\u00a0\u00bb mais conduit comme un veau ros\u00e9) a \u00e9t\u00e9 \u00e9lev\u00e9 par Benjamin Chassagnaud et L\u00e9a Gardien du GAEC de La Vache \u00e0 L\u2019herbe \u00e0 Chamboulive (19). Au long de sa vie, il a \u00e9t\u00e9 nourri au lait de sa m\u00e8re, \u00e0 l\u2019herbe p\u00e2tur\u00e9e et au foin, et au m\u00e9teil produit sur l\u2019exploitation. Il a donn\u00e9 une carcasse de 173 kg, class\u00e9e U-1, matur\u00e9e pendant 7 jours.<\/p>\n\n\n\n<p><strong>LE MATIN<\/strong><\/p>\n\n\n\n<p><strong>De <\/strong><strong>10h \u00e0 11<\/strong><strong>h<\/strong><strong>,<\/strong> les apprentis bouchers discuteront avec les \u00e9leveurs des modalit\u00e9s d&rsquo;\u00e9levage et des d\u00e9bouch\u00e9s de la fili\u00e8re m\u00e2le bovine en France. Ce sera l&rsquo;occasion de questionner \u00e9leveurs et bouchers sur leurs approches et leurs attentes vis \u00e0 vis des caract\u00e9ristiques et de la valorisation d\u2019un veau ros\u00e9. Benjamin et L\u00e9a expliqueront leur choix de conduite d&rsquo;\u00e9levage et leur modalit\u00e9 de commercialisation d\u2019un veau ros\u00e9 .<\/p>\n\n\n\n<p><strong>De 1<\/strong><strong>1<\/strong><strong>h \u00e0 12h,<\/strong> les \u00e9l\u00e8ves feront leurs retours sur la d\u00e9coupe effectu\u00e9e. Les \u00e9changes seront suivis d&rsquo;<strong>une d\u00e9gustation<\/strong> de certains morceaux du veau d\u00e9coup\u00e9, accompagn\u00e9e d&rsquo;une grille d\u2019analyse afin de se questionner sur les crit\u00e8res de qualit\u00e9 d\u2019une viande de veau ros\u00e9 (le go\u00fbt, la tendret\u00e9, couleur&#8230;etc).<\/p>\n\n\n\n<p><strong><em><strong>Ce<\/strong><\/em><\/strong><strong><em><strong>t \u00e9v\u00e9nement est ouvert \u00e0 tous, entr\u00e9e gratuite.<\/strong><\/em><\/strong><\/p>\n\n\n\n<p><strong>RDV<\/strong><strong> salle <\/strong><strong>1<\/strong><strong> du CFA partie enseignement th\u00e9orique.
